Job Description

Key Roles and Responsibilities:

1. Food Preparation and Cooking

  • Prepare and cook dishes according to menu specifications and portion sizes.

  • Ensure food is presented attractively and meets taste and quality standards.

  • Work with different kitchen stations (grill, pastry, sauces, vegetables, etc.).

2. Kitchen Operations and Supervision

  • Supervise commis chefs and kitchen staff in their daily tasks.

  • Coordinate with the Sous Chef and Executive Chef for smooth operations.

  • Ensure that food orders are completed on time and efficiently.

3. Quality and Hygiene Control

  • Maintain high food safety and hygiene standards (HACCP, FSSAI guidelines).

  • Ensure proper storage, labeling, and temperature control for ingredients.

  • Follow FIFO (First In, First Out) stock rotation to prevent food wastage.

4. Inventory and Stock Management

  • Monitor kitchen inventory and report shortages or restocking needs.

  • Ensure efficient use of ingredients to reduce wastage and control costs.

  • Work closely with the storekeeper and purchase team for timely supply.

5. Menu Planning and Innovation

  • Assist in menu development, new recipes, and dish modifications.

  • Suggest creative plating techniques and seasonal menu ideas.

  • Work on cost-effective ingredient sourcing without compromising quality.

6. Training and Team Development

  • Train commis chefs and junior staff on cooking techniques and kitchen protocols.

  • Ensure all kitchen employees understand food safety, portion control, and hygiene standards.

  • Motivate and develop the team for better performance and efficiency.

7. Equipment and Maintenance Handling

  • Ensure all kitchen equipment is clean, functional, and well-maintained.

  • Report any equipment malfunctions to the engineering/maintenance team.

  • Follow safety protocols to prevent accidents or hazards in the kitchen.

8. Coordination with Other Departments

  • Communicate with service staff, F&B managers, and storekeepers for smooth operations.

  • Ensure timely food delivery for orders, banquets, and catering events.

  • Work with the purchasing team to source fresh and quality ingredients.
